Xavi Prat Lacamara: Stereo 18 (Barcelona)

Xavi Prat Lacamara is a co-owner of Stereo 18 in Barcelona. He makes two cocktails for us, one with Rum and Pedro Ximenez and the second with Pisco and Saint Germain Liqueur.

Xavi introduce yourself
I’m Xavi and I originally painted cars, until I decided I wanted to learn english, so I moved to London. I began as a barback and worked my way up to bartender, then left the UK and travelled around South-East Asia. When I returned to Barcelona I worked at W Hotel and did a few seasons in Ibiza. I moved back to Barcelona to Creps al Born with Marco and Juanillo who I worked with at the W, and two months ago we opened Stereo 18. The concept of the bar is to revive the 90’s electronic scene of Barcelona. When we have a DJ in, we only play vinyl records and the interior is quite psychedelic, with a light up dance floor and our red toilets which are proving popular on instagram.

1 barspoon of White Sugar
3 dashes of Coffee Bitters

The bar you dream of
To be honest Stereo 18 is my first bar and I love it, so the only thing I would change is the size. I’d like to make it a high volume club with quality cocktails.

What do you do in your time off
Sometimes I check out other cocktail bars, but mostly I play with my records. I love music. In the summer months I dive, as I used to be a dive master in Zanzibar and have travelled extensively for diving.

The spirit you like the most
Right now it’s white tequila, as I love the way they make it and the history involved. I really like Tequila 8 and Fortaleza at the moment.

What makes a good cocktail
Simplicity. I like simple cocktails, balanced and made well.

What ingredient do you enjoy using in cocktails
I enjoy working with herbs because of the aroma and notes they add to a drink. I particularly like thyme and rosemary.

10ml of Orgeat Syrup
25ml of Lemon

Where do you think we need to go to interview another bartender
My top three bars are in Barcelona. Bar Savage which is across the street, Dr Stravinsky and Paradiso.
