Shelley Tai: Nutmeg & Clove (Singapore)

Shelley Tai is the General Manager of Nutmeg & Clove in Singapore. She makes us two cocktails, one with Spiced Rum and Gula Melaka and the second with Amaro and Soy Tostead Powder.

Shelley introduce yourself
My name is Shelley Tai, I am from Hong Kong, and currently working in Singapore. I have been working as a bartender for around 12 years. I participated in Diageo WorldClass Global Competition in 2019 representing Hong Kong & Macau, it was a life-changing experience for me! I moved to Singapore in November 2020 and now work as a General Manager at Nutmeg & Clove and Last Word, Singapore.

Nutmeg & Clove
45ml of Clove infused with Spiced Rum
20ml of Gula Melaka Syrup
15ml of Lemon Juice
30ml of Cream
30ml Egg White
Top with Ginger Ale

The bar you dream of
I enjoy going to bars that are cosy and guest-focused, so I think it will be a small bar with maybe 10 seats. I wish to be able to take care of and talk to everyone that walks in the door. The bar will be open Monday to Friday so then I can take Saturday and Sunday off for my friends and family

What do you do in your time off
Depends on my mood that day. I normally go to the gym every morning. If I feel like going out I would visit my bartender friends at different bars. If not I would stay home, read a book, make dinner and spend time with my cats.

The spirit you like the most
I like to work with Rye whiskey for cocktails especially higher-proof rye for its punchy and spicy bite. There are so many ways to complement its bold flavour.

What makes a good cocktail
I think balance is the most important aspect of a good cocktail.

What ingredient do you enjoy using in cocktails
I like to experiment with different Amoros, I think it adds a lot of complexity and texture to a cocktail.

40ml of Fernet Branca
10ml of Braulio Amaro
1g of Soy Tostead Powder
15ml of Lime Juice
60ml of Soy Milk
20ml of Pandan Vanilla Syrup
