Johan Evers is the co-founder of A Bar Called Gemma in Stockholm. He makes us two cocktails, one with Whisky and Amerisse and the second with Pisco and Muyu Jasmine.
Johan Skarlen introduce yourself
I am Johan Evers, 39 years old, born and raised in Stockholm. Started as a bar back at the age of 17 and worked my way up to bartender, Bar manager, and Food & Beverage manager, then at the age of 25 started my first company. Over the years, I competed and won some Global Competitions like in 2018 Art of Italicus or Absolut Invite in 2016. Other noticeable feats in Top 10 World Class 2016, World Top 4 Beefeater MXNLDN 2016, and Bartender of the Year 2016 Sweden. Nine years ago in 2014, the dream of opening up my bar was my only focus and during the time until we opened, in May 2019, everything was channelled into the project. Now excited about the future, and the idea of more venues but most of all I’m very happy where I am.

What do you do in your time off
I spend a lot of time with family, friends and my dog. I like to take care of myself with work-outs, doing a lot of activities outside and I enjoy spending time doing non-related things to the industry.
The spirit you like the most
I’m an explorer and get excited about new products and flavours. So I guess, new ingredients can be anything that gets my brain going.
What makes a good cocktail
In my opinion, it’s about balance, texture, dilution, temperature, visuals and atmosphere around it.
What ingredient do you enjoy using in cocktails
Homemade Vinegar is something fun. It adds a lot of flavours when used in the right amounts and n a drink.

Where do you think we need to go to interview another bartender
It will be bars from the two last countries I visited. First from Seoul, go to Zest, Bar Cham and Charles H. Then in Taiwan, Vender and Cookoo Bar
